Ingredients

  • 1/2 can of young green jackfruit, 2 tbsp BBQ sauce, 1/4 red onion (sliced), 1/2 avocado (sliced), 2 slices of whole grain bread, 1/4 cup coleslaw mix, Salt and pepper to taste

Steps

  1. Drain and rinse the jackfruit, then shred it with a fork. 2. Heat a pan over medium heat and add the shredded jackfruit with BBQ sauce, cooking for 5-7 minutes. 3. Toast the bread slices. 4. Assemble the sandwich by layering the BBQ jackfruit, sliced red onion, avocado, and coleslaw mix on one bread slice. Season with salt and pepper. 5.
